How do I know if ants are sweet eaters or grease eaters?

You can do a quick test with peanut butter and honey to determine what kind of food an ant colony is looking for. If they go for the peanut butter, then they are looking for protein, and you would use a granule bait. If they go for the honey, then they are looking for sweets and you would use a gel or liquid bait.
