In restaurants, fruit flies almost always breed from the syrup and other food and drink that falls behind the bar areas and where the soda machines and soda guns are or where there is produce and such in a residential area. As far as the source and breeding sites, you should wash all of the areas underneath the bar and soda areas to clean any syrup or other sticky areas and places where food could have failed behind or under machines/appliances etc. You can also use a short acting spray such as Microcare for a quick knockdown of the nuisance adults that are present at the time you spray.
